The Pimento Cheese Standard

Ingredients

  • 12 oz sharp cheddar cheese freshly grated
  • 4 oz pepper jack cheese freshly grated
  • 8 oz cream cheese softened
  • 1/2 cup mayonnaise
  • 4 oz diced pimentos drained
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/8 teaspoon cayenne pepper
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt

Method
 

  1. Grate cheddar and pepper jack cheeses using a box grater. Set aside.
  2. Beat cream cheese in a large bowl until smooth, about 1 minute. Add mayonnaise and mix until fully combined.
  3. Add Worcestershire sauce, garlic powder, onion powder, cayenne, black pepper, and salt. Mix to incorporate.
  4. Fold in grated cheeses and drained pimentos. Fold gently for a chunkier texture or mix more vigorously for a smoother spread.
  5. Taste and adjust salt or cayenne as needed.
  6. Cover and refrigerate at least 1 hour before serving.

How to Know It's Done

  • Serve chilled or at cool room temperature.
