Low & Slow Southern Green Beans

Ingredients

  • 2 slices thick-cut bacon chopped
  • 2 cans (14.5 oz each) cut green beans undrained
  • 3 tablespoons yellow or sweet onion finely chopped
  • 3/4 teaspoon granulated sugar
  • 1/4 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or to taste

Method
 

  1. In a medium saucepan over medium heat, cook chopped bacon until it begins to brown and render its fat, about 4 to 5 minutes. Do not cook until fully crispy.
  2. Add green beans with their liquid to the pan.
  3. Stir in chopped onion, sugar, salt, and pepper.
  4. Bring to a gentle boil, then reduce heat to low. Cover and simmer 35 to 40 minutes, stirring occasionally, until beans are tender and deeply flavored.
  5. Taste and adjust seasoning. Serve with a slotted spoon, keeping the beans, onion, and bacon together while leaving excess liquid behind.
