Turkey Taco Tuesday for Two

Boldly seasoned ground turkey cooked down with tomato sauce and lime, served in warm tortillas with all the classic toppings. A fast, satisfying weeknight dinner built for two.

Ingredients
  

Turkey Filling
  • 1/2 lb ground turkey
  • 1/2 small onion diced
  • 1 clove garlic minced
  • 1/2 tablespoon olive oil
  • 1/4 cup tomato sauce (or 1 tablespoon tomato paste plus 2 tablespoons water)
  • 1 teaspoon lime juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional) optional
For Serving
  • 4 small corn or flour tortillas
  • 1/2 cup shredded cheese (cheddar Monterey Jack, or Mexican blend)
  • 1/2 cup shredded lettuce
  • 1/2 small tomato diced
  • 1/4 cup sour cream or Greek yogurt
  • 1/4 cup salsa or hot sauce
  • 1/2 avocado sliced (optional); optional
  • Fresh cilantro (optional) optional

Method
 

  1. Heat olive oil in a skillet over medium heat. Add onion and saute 2 to 3 minutes until softened. Add garlic and cook 30 seconds.
  2. Add ground turkey and cook, breaking it apart, about 5 minutes until browned.
  3. Sprinkle with salt, pepper, chili powder, cumin, paprika, oregano, and cayenne if using. Stir well to coat.
  4. Add tomato sauce and simmer 2 to 3 minutes until slightly thickened. Stir in lime juice and remove from heat.
  5. Warm tortillas in a dry skillet 30 seconds per side, or microwave wrapped in a damp paper towel for 20 seconds.
  6. Fill each tortilla with turkey mixture and top with cheese, lettuce, tomato, sour cream, and salsa. Add avocado and cilantro if desired. Serve immediately.
