Velveeta Diplomacy

Ingredients
  

Main
  • 1 tablespoon unsalted butter
  • 1 tablespoon all-purpose flour
  • 1 cup whole milk
  • 1 cup Velveeta cheese cubed
  • 1/4 teaspoon garlic powder (optional) optional
  • Salt and pepper to taste

Method
 

  1. Melt butter in a small saucepan over medium heat. Whisk in flour and cook 1 minute, stirring constantly, until a smooth paste forms. Do not let it brown.
  2. Slowly pour in milk while whisking continuously to prevent lumps. Cook 2 to 3 minutes, stirring often, until the mixture thickens slightly.
  3. Reduce heat to low. Add Velveeta cubes and stir until fully melted and smooth.
  4. Stir in garlic powder if using. Season with salt and pepper to taste.
  5. Serve immediately over fries, pasta, nachos, or vegetables.

How to Know It's Done

    Cook's Notes

    • If the sauce thickens too much as it sits, add a small splash of milk and stir over low heat to restore the right consistency.
    • A dash of hot sauce or pinch of cayenne turns this into a quick spicy queso.
